Juliets Brilliant and Easy Cassolet
This is so simple, and totally delicious, very easy to add potatoes to if you want to bulk it up. serves 2,
Bayleaf
Chopped onion
2 chopped garlic cloves
1 tsp, fresh rosemary, chopped
1/2 tsp fresh thyme, chopped
1/1 tsp paprika
1 tin chopped tomatoes
1/2 chorizo, 1cm slices
14oz can cannellini beans
parsley, chopped
2 rashers of bacon chopped
Grab a large heavy based pan!
Fry bacon and bayleaf in a dash of olive oil.till it glistens
add onion fry 3-4 minutes
add garlic, rosemary and thyme, stir through for a minute
add paprika and tin tomatoes, simmer for a moment
add chorizo and beans with 100ml water
simmer for 5 minutes
stir in parsley and eat with crusty bread :)

Sweet Potato and Coconut Milk Soup
2 med/large sweet potato, peeled and diced
1 pint veg stock
1 med onion diced
2 tblspn tumeric
2 tspn cumin powder
2 tspn coriander powder
1/2 tspn cinnamon powder
1/2 tspn grated ginger
1 garlic clove diced
Tin coconut milk, (unsweetened)
lemon juice to taste
olive oil

- Boil the sweet potatoes in the veg stock until soft (10 minutes)
- Fry tumeric, cumin, coriander, cinnamon 30 seconds
- Add onion, garlic, ginger to the spices and cook until the onion is soft (5-7 minutes)
- Add together, with the coconut milk, and blend,
- If too sweet for personal taste add a few drops of lemon juice, (YUM)

Great home made muesli
Mix together in a large tupperware tub the following, the amounts used can vary in taste, but make sure there is plenty of oats!!
Plain porridge oats
Chopped mixed nuts
Sunflower seeds
Pumpkin seeds
Dried fruit, ie: cranberries, apricots, (whatever you like)
mix together and eat in the mornings with natural yoghurt, you can also add fresh fruit when in season, scrummy!!!

Butternut Squash Soup
Roast a butternut squash in the oven until soft all the way through, about 45 mins
Fry garlic, and a sliced onion in curry powder until soft
Scrape out squash flesh, minus seeds, into a bowl, add onion and garlic, tin of tomatoes and veg stock.
Blend, and enjoy!

Chef Rick’s Louisiana Seafood Gumbo
this is really tasty, and great with a good glass of white! We uses this when we did a creole night, along with the bourbon street chicken
Ingredients:
1/4 cup oil
1/4 cup all-purpose flour
1 onion, chopped
1/4 cup chopped green pepper
1 cup chopped celery
2 cups fresh or canned tomatoes, chopped
4 cups fish stock
2 cups seafood–shrimp, crawfish, crab, and/or catfish
2 cups okra, sliced into rounds
1 cup cooked rice
Directions:
In a large pan, heat the oil over medium heat.. Add the flour and cook over medium heat, stirring constantly, until it turns the color of peanut butter. Add the onion, pepper, and celery to the oil and saute until translucent. Add the tomatoes, and stock, and cook until all the vegetables are tender. Stir in the seafood, the okra, and the rice. Cook for 10 minutes, until the fish is just cooked.
To serve, place into bowls and serve with a mound of rice in the middle of the bowl.

Huli Huli Chicken
I first cooked this when a group of us were doing "the world tour of addictott rd" I chose Hawaii, and this was one of a group of dishes I served, and has become one of our favourite chicken dishes. Very simple to do, and great tasting
This popular Hawaiian barbequed chicken barbeque sauce for this dish is flavored with pineapple juice, soy sauce, sherry, ginger, and garlic.
Ingredients:
3 chickens, cut into quarters
1/4 cup tomato ketchup
1/4 cup soy sauce
1/4 cup brown sugar
1/2 cup chicken broth
1/3 cup sherry or white wine
1/4 cup frozen pineapple juice concentrate.
1 garlic clove, minced
1/2 inch piece of ginger root, finely minced
Two drops of worcestershire sauce
Instructions:
Mix all ingredients except chicken, and brush over chicken pieces. Cook chicken on an grill until done, will will typically take about 40 minutes. Brush chicken with sauce repeatedly during the cooking period.

Best Barbque chicken EVER
I have talked about this loads in class, its known as drunken chicken or beer can chicken, it is spectacular to serve still sat on its beer can. The beer cooks the chicken from the inside, its great to experiment with beers, guiness, cider etc
1 whole chicken
1 can beer
garlic/onion and herbs to taste
Open can of beer, drink 1/3rd can open the top off, and put garlic/onion and herbs to taste in the can
wash, dry chicken etc
Sit chicken right over beer can, so chicken is sat propped upright using beercan and legs as a tripod,
Rub oils and any herbs to taste into chicken.
put on barbeque, cover, cook until done!
